| I've been looking for an excuse to bake a cake for weeks now. Since the hot summer months are over and there are so many flavorful fruits currently in season, I figured it would be the perfect time to bake a fall inspired cake. And lucky for me (and him), it just so happens to be my dad's birthday next week. He gravitates towards baked goods with a fruit component so when I saw this recipe I knew it was right up his alley. I haven't had the chance to go apple picking (yet), so I cheated and used store bought organic applesauce. Regardless, the cake was deliciously moist and the cream cheese frosting balanced out the spices perfectly. Next time I bake this I may even consider leaving out the frosting and serving it for breakfast. |
